1. Wrap Salad With Lemon and Thyme (with the Parmesan optional)
I can’t begin to tell you what a great lunch this is! I love it very much, sometimes with the thyme, but if there isn’t any left, I like the lemon as well! You will have no problem choosing one from these two, and it keeps things interesting and fresh.
2. Greek Yogurt-Tomato Salad
What a delicious snack! This salad is so good and simple and healthy. It tastes so good that when I taste it, I think about it all day. One of my favorite things to eat at work is yogurt; it tastes great, smells lovely, and goes down very easily.
3. Homemade Italian Pasta Salad (with the ingredients above)
What kind of food would I rather be on the job at 5pm than on Facebook as I type a post? Of course not pizza, because what’s the point of baking it? But in our case, we really want a pasta salad, which is something for the night, especially if you are up till 2am writing your book. That’s why we do it: we need to stay awake! So put an egg in the microwave or dishwasher (or whatever other method of cooking your spaghetti takes) and mix thoroughly first with water. Add salt to make sure it is fine, then start mixing again. Cook for 15 minutes on medium heat. Served with fresh spinach, shredded cheddar cheese, olive oil, freshly chopped basil, crèmes and dried oregano. The dressing is Basilolino D'Asturias La Ribera di Chianti.
4. Organic Cranberries with Hazelnuts on Sweet Almond Bites
I mean who doesn’t love cranberries? Cranberries are great for all sorts of reasons. They give us energy, they help combat hunger from some people (and you know all those times when our stomachs just can’t get enough), and they have amazing antioxidant qualities (another pro of cranberries).
So grab your cranberries (I use organic cranberries, and yes, mine taste way better than some others I see on Instagram) and spread them over your almonds and then add some crunchy bits of chocolate. After you have done that, drizzle the almonds with honey. Now you have everything you want (except maybe more!)
5. Turkey Ham and Feta Cheese Salad
Homemade ham is amazing and tasty, and it's easy to prepare: melt the cheese, cook the bacon, drain, chop, season and season again. Add the feta cheese and some extra virgin olive oil to taste. Serve warm or at room temperature.
6. Loaded Up On Cucumbers
What could be better for lunch than a bowl full of cucumber! They are so nutritious; they contain fiber, protein, minerals and vitamins. If you choose a sweet tooth, pick out a few seeds and put them on your salad. Or go even further by adding a tomato sauce.
7. Spicy Rice Salad (with lime wedges)
You probably already heard of spicy rice. What makes spiced rice different from regular rice is that it has dried herbs, spices, sugar and salt. In fact most types of rice, including standard white rice, include the same seasoning. But what is it exactly that causes the spices in spice rice to change in flavor? Well, according to scientists, the reason for this change in color is due to a group of enzymes called liposomes in the leaves and stems of green tea plants. When they come into contact with light, these enzymes turn brown and become light pink. These enzymes in the leaf and stem serve as a defense against attacks by pathogens because they dissolve. If they were to come into contact with certain chemicals, they react and become dark pink.
The process is thought to have originated somewhere around 2000 BC. However before that, a recipe for spice rice was found in 2783 B.C. A similar dish, chili pepper seed rice, dates back as far as 5000 BC.
8. Avocado, Prawn and Lime Smoothie
Avocados are full of natural sugars. They also contain healthy fats in abundance, meaning they are low in cholesterol, saturated acids and trans fats. They are high in omega 3 fatty acids, and they're high in vitamin E, iron, and calcium. All natural and healthy fats, but best of all: no artificial ingredients added to them. A smoothie like this is truly life changing and I'd advise everyone to try it with their own fruit.
9. Honey and Maple Butter Ice Cream with Salted Caramel Mint
This will keep your mind set focused while you sip the ice cream (and after you finish!). Get yourself a spoon, a scoop, a cup, two cups or three cups and put it into the freezer. Then take a little chilled ginger in your hand and squeeze on the ice cream. Next time you go out, you won't even notice that there is ice on your hands: your body sends signals through the brain to let others of its neurons know that it is ready for action!
10. Apple Strawberry Pie
This sounds really strange, but it is! Apples are amazing for weight loss. They burn slowly, and they don't cause a reaction with sugar for longer hours. There is almost no diet that can compare. This happens when apples have two parts: the outer layer, and the inside. The inner layers are sweeter than the outside and have higher amounts of carbohydrates and proteins. This means that they release less glucose. Studies show that drinking enough apples may actually cause blood glucose levels to drop; when this happens, insulin levels tend to go down. An apple a day helps keep blood glucose levels steady.
